Your Superfood’s mix adds such a fresh taste making these perfect for summer.

They are also refined sugar free thanks to Beloved‘s 100% whole Date Nectar. Which is not only a natural sweetener but adds a delicious date taste to the donuts and some of the benefits of the whole dates: it is a source of natural minerals, phytosterols and anti-oxidants.

Yields: 6

Prep Time: 5-10 minutes

Baking Time: 15 minutes

Difficulty: Easy

  • 2 tbsp Power Matcha Power
  • 1 tbsp flax seeds
  • 1 tsp baking powder
  • 1 tsp bicarbonate of soda
  • 1 tsp xanthum gum
  • 1tsp cinnamon
  • 1 cup buckwheat flour
  • 1/3 cup Date Nectar
  • 1/2 cup unsweetened almond milk (or another non-dairy milk)
  • 1 tsp vanilla extract

Optional Glaze:

  • 1 tsp xanthum gum
  • 8 tbsp water
  • 2 tsp Power Matcha
  • Couple drops of vanilla extract

Combine the dry ingredients in a large mixing bowl.

Combine the wet ingredients in a seperate mixing bowl. Stir well.

Mix both the dry and wet ingredients together, ensuring the mixture is fully combined.

Line the donut tray with coconut oil. If you don’t have a donut tray you can use a muffin try and the the holes of the donut yourself.

Roll the dough into 6 balls and then mould or spoon the mixture into the tray.

Bake for 15 minutes at 180°C.

Once cooled add the glaze.

Simply mix the Power Matcha Powder and xanthum gum together before adding the vanilla extract and water slowly. Stir continually, adding more or less water depending on the desired consistency of the glaze. Coat the donuts evenly with the paste and leave to set. They will set best in the fridge when chilled.

Finally, top with goji berries, desiccated coconut flakes and baked apple chips.

Best served either warm without the glaze or as soon as the glaze has set and toppings have been added.

The debate still continues… it is donut or donught? Personally, I would never say ugh in the middle of eating a donut, hence my choice. A least one thing is certain, this recipe is sure to please.
