High protein, dense Blueberry Pie Cookies. Crumbly and crunchy on the outside, and soft and chewy in the middle. I am in cookie heaven. And, even better these cookies pack a serious protein punch.
By using Whey Box’s Vegan Blueberry Protein Powder, I managed to get a vibrant natural blueberry flavour, huge amounts of protein per cookie (18g of protein per 25g of powder) and stick to all natural ingredients. The spirulina in the powder gives a gorgeous blue tinge to the cookies. While the added flaxseed also boosts their fibre content. Who knew cookies could actually taste this good and be packed with so much goodness?
What’s more, they are as easy as pie to make…
- 20g oat flour (I blended oats into flour)
- 30g buckwheat flour
- 50g Whey Box Blueberry Vegan Protein Powder
- 1tsp baking powder
- 30g frozen blueberries
- 5-7 tbsp. warm water, as needed.
Preheat the oven to 180.C.
In a large bowl add the oat flour, buckwheat flour, protein powder and baking powder. Mix all the dry ingredients together thoroughly.
Next, add in the water 1 tablespoon at a time until you are able to combine the mixture into a firm and sticky dough. Do this step very slowly so you don’t add too much water and end up with an overly runny mixture. Use your hands rather than a spoon at this stage to combine the dough better.
Mix in the frozen blueberries evenly throughout the mixture.
Roll the dough into 6 even balls and place on a lined baking tray. Press the top of each ball down slightly using a fork.
Bake in the oven for 15-20 mins.
Eat straight away (cookies are always best warm and fresh!) or leave to cool on a wire rack.
They are best stored and in an airtight container.
You can also heat them up in the microwave the next day. I love mine warm and smothered in nut butter… shock! Or crumbled on top of porridge or a smoothie bowl. The most decadent of breakfasts.
