Healthy no-bake Cookie Dough Balls

Coconut Peanut butter chocolate chip cookie dough balls– a bit of a *seriously delicious* mouthful. Inspired by @thebigmansworld‘s ‘Healthy Flourless Cookie Dough Sandwich Cookies’.
 
Dairy, oil and refined sugar free, vegan friendly, paleo and gluten-free options, and loved by ALL.
 

Ingredients:

  • 1/2 cup coconut flour
  • 1/2 rolled oats (use gluten-free oats if required or omit for paleo version and use 1/2 cup more of coconut flour).
  • a pinch of sea salt
  • 1/3 cup smooth peanut butter – I used PB fit Peanut Butter Powder mixed with water- (or nut butter of choice)
  • 2- 3 tbsp agave nectar (can sub for honey or maple syrup)
  • 1/4 cup unsweetened almond milk (or any non-dairy milk of choice) 
  • Handful of carob nibs 
Method:
Blend all the ingredients minus the carob nibs.
 
The mixture will firm slightly more after blending, so don’t worry if it seems a bit too liquidity at first.
 
This easy, no-bake cookie dough is perfect to eat with a spoon straight from the blender, roll into balls or spread in a baking tray, chill and later cut into bars.
 
Makes around 15 balls.
Store in a airtight container in the fridge for up to 5 days.
 
The ultimate healthy breakfast, snack or dessert for any sweet tooth.
