Pancakes are the perfect set up for any Weekend. Especially when they are this easy and fluffy!
1 medium sweet potato
1/4 tsp baking power
1/2 tsp vanilla essence (optional)
Bake the sweet potato until the flesh is soft and then leave until it’s cool enough to handle. Whisk the eggs, baking powder, vanilla essence and mashed sweet potato flesh together until a thick, smooth batter is formed.
Fry using coconut oil, stack them up and then load with all your favourite toppings.
(I went for raspberries, flaked almonds and agave nectar)
