The Ultimate Seedy Bagels

Everyone can enjoy these Grain-Free, Dairy-Free Seedy Bagels. Perfect for breakfast, lunch, dinner or anytime in between.

 

Ingredients

  • 4 tbsp flax, ground
  • 1/2 cup warm water
  • 4 tbsp melted coconut oil
  • 1/2 cup coconut flour
  • 1 cup  brown rice flour
  • 1/2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp xanthum gum
  • 4 tbsp raw pumpkin seeds
  • 4 tbsp raw sunflower seeds
  • 1/2 cup warm water

Note: any of these seeds can be left out or replaced if you desire.

 

Method

  1. Preheat the oven to 180 degrees C.
  2. Combine the ground flax seeds with 1/2 cup warm water in a large mixing bowl.  Let the mixture sit for at least 5 minutes so that it gels.
  3. Add the coconut oil (at room temperature) to flax seed-water mixture and stir well.
  4. In separate mixing bowl combine all the dry ingredients: coconut flour, brown rice flour, baking powder, baking soda, salt and xanthum gum.  Mix throughly.
  5. Add the flour mixture and 1/2 cup warm water to large mixing bowl.  Stir, then knead the dough with your hands.  The dough should be slightly sticky, but you should be able to easily roll it into a ball.
  6. Next, knead in the pumpkin and sunflower seeds.
  7. Separate the dough into 4 even pieces and roll into balls. Make a hole in the centre of each ball with your finger to form a bagel shape.
  8. Place the bagels on lined baking tray.
  9. Bake at 180 degrees C for 20-25 minutes.
  10. Remove from the oven and let cool. (Personally, I love mine straight from the oven!)

 

My first instinct (obviously) was to smother the warm bagel in peanut butter and homemade raspberry jam…
